Myth Busters said it’s because of supercooling - a beverage cooled just under its freezing point when jerked produces a cascading effect of crystallization.
They even tried it with other beverages like Gatorade and CocaCola (plastic or glass, doesn’t matter) :D But bummer, I couldn’t find the full episode :(
